Pilot Farm: Il Pecorino (di Luigi Farina)
Il Pecorino is a family-run organic livestock farm in Tuscany’s Maremma region, managed by the Farina family for three generations. Established in the 1960s by Sardinian shepherds, the farm has been certified organic since 2001, reflecting a strong commitment to sustainability, animal welfare, and high-quality production.
The farm maintains a flock of around 1,250 sheep (Sardinian and Lacaune breeds), all grazing outdoors year-round and milked twice daily with automated systems equipped with RFID tracking and milk quality sensors. Its 50 hectares of pasture are cultivated with oats, Alexandrian clover, and alfalfa, supplemented with haylage and manure-based fertilization to sustain livestock feed naturally.

A typical day at Il Pecorino begins early in the morning with the first round of milking. Afterward, the flock is released into rotational pastures for grazing.
