Azienda Agricola Coveri S.S.S.A is a 34-hectare organic farm in the hills of Torrita di Siena, Tuscany, managed by Stefano and Carla Coveri since 2005. The farm combines cereal cultivation and livestock breeding with artisanal dairy production, emphasizing sustainability and animal welfare. The farm raises around 300 dairy sheep (Massese, Comisana, and crossbreeds) and 30 Saanen goats, all grazing freely and monitored with RFID tags. Crops include durum and einkorn wheat for in-house pasta, alongside forage mixtures for livestock. Dairy is produced on-site from sheep and goat milk, transformed into fresh, semi-aged, and aged cheeses, as well as seasonal goat cheese and ricotta. Products are sold directly at the farm, via home delivery, or shipped to customers, fostering strong consumer connections.
